Thai goodness

I'm camping with about 8 others this year- each one of us will have a night to cook dinner. I am looking forward to my night- Thursday- usually around when i'm hankering for some flavors and animal flesh. I'm bringing a camping stove, but forgoing a cooler this year- so I am looking forward to the challenge of making a delicious Thai meal sans ice-chest.

-maybe make that orange salad recipe I read about on this tribe
-Red Curry with rice (various canned veggies + trader joes curry sauce + precooked rice + canned tuna or meat for those who want)
-Mango sticky rice (trader joe's jar of mango halves + coconut milk + jasmine rice that's been soaking all day)
-Canned Thai iced tea (maybe put these in someone else's cooler for a bit)

Any suggestions?

    bump for inspiration's sake.
    Dinner turned out wonderful I loved feeding 10 people delicious curry and mango sticky rice all from non-perishable foods.

      Question- did you pre-cook the rice, and then soak it in coconut milk?

        So where are you camping? :P

        I was wondering the same thing, do you just soak the rice until it is done? That'd be really great for someone like me, who doesn't bring a stove and pots and pans.

          MRE heaters are the bombs! You just add a bit of water to the bag and it heats up. You can find them for sale online at www.theepicenter.com and look at the MRE page. If you freeze and/or bag things into the right sized seal-a-meal bags they work perfectly. It would also work for tastee-bite meals that are sized right.

          I did it all on a camping stove. But I wonder if leaving a pot on the roof of a car all day with the rice and coconut milk cooking in the hot sun would work... And I'm not making it to the playa this year- so the yumminess is yours to carry on.
