i have heard that freezing chinese take-out and bringing it to the playa is one of the most amazing things ever... but i enjoy thai food better. does anyone know if freezing curry-style dishes work? i am concerned about the oil separating and not returning to something edible.

thanks!

I don't specifically know about freezing curry-style dishes. But for the last couple years I have cooked up some rather gourmet dishes, packaged them in single servings in vacuum-seal bags and then frozen them. They are fantastic for our camp because we don't have to eat at the same time and we get yummy homemade food. Plus the frozen dishes act as ice blocks until eaten.

I made a variety of dishes, including things with oil. I never had any oil separation issues. But I also reheat the food while it is still in the vacuum-seal bag. You can just stick the whole thing in boiling water (or in an RV microwave). Seal-a-meal and Food Saver both work great. You can get them at Costco and I just saw it at Lucky's last weekend too. Good luck!
